We organize this together with Rene Wagenaar of cheese specialty store Ed Boele in the Fahrenheitstraat. In 2016 they were named ‘Best Foreign Cheese Specialist’ in the Netherlands. They know their cheese by the touch. René explains what makes the different cheeses so special, what the production methods are and, of course, how they taste.

And all that in combination with great bean-to-bar chocolate.

We have several rounds with different types of cheese. From hard, semi-soft, soft to (blue) moldy cheese from home and abroad. We combine this with chocolate from different origins and different cocoa percentages. We look for similarities, contradictions and combinations that bring each other up.
